1 1/4 Cups Pillsbury's Best All Purpose Flour
1/2 teaspoon salt
1/2teaspoon soda
1/2cup granulated sugar
1/4cup firmly packed brown sugar
1 egg
1 teaspoon vanilla extract
1/2cup Land O Lake Butter, softened
1 cup diced toasted almonds
1 cup chocolate covered raisins
Oven 375 degree F Yield: About 60
Combine all ingredients except almonds and raisins in large mixer bowl.
Beat 1 minute at medium speed of mixer. Stir in almonds and raisins.
Drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 375 degrees F. 10 to 12 minutes.
For use with Pillsbury's Best Self-Rising Flour, omit salt and soda.
Variation: Chocolate covered peanuts may be substituted for raisins;
flaked coconut may be substituted for almonds. Increase flour to 1 ½
cups.

Example recipe:
Cream Cheese Cake
1 1/2 cups Zwieback crumbs (Nabisco and Gerbers both make (as of
2004) boxes of Zwieback aimed at babies).
5/8 cup sugar
2 tablespoons butter, melted
2 tablespoons flour ¼ teaspoon salt
1 pound cream cheese
1 teaspoon vanilla
4 eggs, separated
1 cup cream
Combine Zwieback crumbs with 2 tablespoons sugar and butter: blend
thoroughly. Line bottom of spring-form pan. Mix remaining ½ cup
sugar with flour and salt and blend thoroughly with cream cheese. Add
vanilla and beaten egg yolks and beat. Add cream and beat again. Fold
in beaten egg whites. Pour mixture on top of crumbs and bake in
moderate oven (325 to 350 degrees F.) about 1 hour, or until mixture
is firm. Turn off heat, but do not remove from oven for 1 hour or until
cool. Makes 1 (9-inch) cake.

Recipe Example: Lemon Snow Pudding 1 envelope Knox Gelatin 1/2 cup cold water 3/4cup boiling water 3/4cup sugar 1/4 teaspoon salt 1/4cup lemon juice 1 teaspoon grated lemon rind 2 egg whites, stiffly beaten Soften gelatin in cold water. Add boiling water, sugar and salt. Stir until dissolved. Add lemon juice and rind. Chill until mixture is slightly thicker than consistency of unbeaten egg whites. Whip until light. Add the stiffly beaten egg whites. Place the bowl in ice water. Continue beating until mixture begins to hold its shape. Pour into large or individual molds. Chill until firm.. Unmold (see page 5) and sere with soft custard, chocolate sauce or fresh crushed berries or fruit. Yield: 6 servings.

Example Recipe: Mushroom Pie (8 to 10 servings) 6 tablespoons Fluffo (A yellow shortening invented by Proctor & Gamble in 1954, no longer available. Substitute with a good quality shortening) 2 pounds fresh mushrooms washed and trimmed 1 teaspoon salt 1/2 teaspoon pepper 2 tablespoons lemon juice 3 tablespoons enriched flour 1 ½ cups chicken stock (homemade – not canned) 1/8 teaspoon marjoram ½ cup sherry ½ cup cream Pastry for Single Crust In a skillet, melt 4 tablespoons Fluffo, add mushrooms, salt, pepper and lemon juice, cover and cook, stirring, until sauce thickens. Remove from heat and stir in wine and cram. Pour over mushrooms. Place pastry on top of mushroom mixture. Flute edges and slit top for steam to escape. Bake at 400 degrees F. For 10 to 12 minutes; reduce heat to 350 degrees F. And bake for 10 minutes longer.

bread making will be useful as it explains the ˜sponge method, the
straight dough method, and other directions for how to deal with
breads.
Nice instructions on oven canning.
Calls for a wooden spoon and a wire egg beater.
Nice section of ˜Whole Meal Oven Cooking Recipes“ that would be
handy!
First Whole Meal Menu No 1. Includes Baked Ham with Potatoes,
Onions and Carrots En Casserole, Stewed Apricots, and Bread
Pudding. (Bread Pudding is one of my favorites.)
