| A Collection of Vintage Strawberry Cake Recipes Strawberry cake and shortcakes are among some of my favorite cake recipes tofind hidden in tin recipe boxes. I stumble across vintage recipes in the strangest of places. Someday, when I have a little more time, I will tell you some stories. All of the collected recipes I add here are taken from handwritten recipe boxes or journals. I am, single-handedly, trying to salvage old recipes from being lost to us forever. You gotta love a collector. (You believe all that?) Seriously, Our mother's and grandmother's spent a great part of their lives in the kitchen preparing food for the family. Those days and times are lost to us forever. I don't want to loose their recipes too. It is their history, a part of who we were then. A part of why we are what we are today. Their recipes are our history. | Heavenly Strawberry Shortcake 6 cups very thinly sliced strawberries. Reserve one whole berry for garnish 1/2 to 1 cup sugar, depending on sweetness Cloud sponge cake 1 to 1 1/2 pints rich vanilla ice cream, softened. Sprinkle berries with sugar. Let stand about 1 hour to draw out the juice. At serving time place cake on platter. Top generously with berries and juice. Border platter with any remaining berries. Place scoops of ice cream in center of cake. Garnish with reserved berries. Makes about 12 servings. |

| Strawberry Cake Mix together in a large bowl: 1 package of dry white cake mix, one package of dry strawberry gelatin, two tablespoons of flour, four eggs, 1/2 cup cooking oil, 1/4 cup of water, and one cup of thawed strawberries. Bake at 350 degrees for 40 minutes. When cool, top with whipped cream. |

| Strawberry Cake from Shirley Hickman 1 box white cake mix 2 T. flour Wesson 4 eggs 1/2 cup water 1 (3 oz.) box strawberry Jell-O 2/3 cup oil - Crisco or Canola 1 cup frozen strawberries with juice Mix all ingredients together. Beat according to directions on cake mix. Bake in 9 x 13 pan. 25 to 35 minutes. Glaze: Melt together: 1/4 stick margarine or butter 1/4 cup strawberries. Stir in 1 to 1 1/4 cups sifted confectioners sugar. Pour over warm cake. |

| Strawberry Cake Mrs. Ruth Garrison did not tell us any further instructions. 1 box yellow cake mix 1 box strawberry jello 4 eggs, beat 3/4 cup cooking oil 3/4 cup sweet milk 1 teaspoon vanilla Mix all at once Bake at 375 degrees Filling: 1 box powdered sugar 1 stick oleo - soft 1 small pkg strawberries drained 1/2 teaspoon vanilla Mix with electric mixer |

| Strawberry Scone Short Cakes 2 cups flour 3 teaspoons baking powder 3/4 teaspoon salt 1/3 cup sugar 1 teaspoon grated orange rind 1/2 cup butter 1 egg well beaten 1/2 cup milk (approximately) 4 cups sweetened sliced strawberries 1/2 pint cream Heat oven to 450 degrees. Sift together dry ingredients. Add rind. Cut in butter. Add well beaten egg, combined with milk. Knead. Roll or pat dough to 1/2 inch thick and cut into 2 or 3 inch rounds. Spread tops with butter. Sprinkle with sugar. Bake on cookie sheet. Here she did not give the baking time. So your guess is as good as mine. Just bake until done. These old recipes, taken from Journals and little tin recipe boxes are a fantastic way to keep our past alive. Women baked, broiled, fried, and concocted all sorts of goodies way back then. We should never loose our history. |

| Strawberry Dessert 1 7/8 ounce box vanilla wafers 3/4 cup butter 1 cup confectioners sugar 2 eggs 1/2 cup finely chopped nuts 1 cup whipped cream 2 cups sliced strawberries - (ok if 2 frozen cups are used) Roll cookies into crumbs and spread half of it on buttered 8 inch square pan. Cream butter and sugar until light. Beat in eggs, one at a time. Spread mixture over crumbs. Sprinkle with nuts and top with berries. Spread cream and sprinkle with remaining crumbs on to. Chill at least 4 hours before serving. |

| Strawberry Shortcake from Mrs. Martha Amos. A fifties recipe. 3/4 cup of cream 2 cups of biscuit mix 2 tablespoons of sugar 1 quart of strawberries Mix thoroughly with fork the cream and biscuit mix. Keep dough soft. If too moist, add more mix. Knead 10 times on surface, lightly dusted with flour. Pat or roll dough to have the thickness desired in baked shortcakes, dough doubles in volume during baking. Cut into individual shortcakes with cutter dipped in flour. Bake about 10 minutes in hot oven, 450 degrees. Spit and butter, if desired. Place fruit between layers and over top. Makes 6 3 inch shortcakes. Top with whipped cream . |

| Rhubarb Cake - Marge
's Recipe Box - This recipe box was from around the 1950's 1/2 Cup Oil - (she noted she used Crisco) 1 teaspoon soda in 1 cup buttermilk 1 1/2 cup brown sugar 1 teaspoon vanilla 2 cups flour Lastly fold into dough 1 1/2 cups cut up raw rhubarb. Bake in 8 by 13" pan 30 -40 minutes. Sprinkle 1/2 cups sugar and 1 teaspoon cinnamon on top of dough before you bake it. Rhubarb Upside Down Cake 3 cups fresh Rhubarb, 10 marshmallows, haled, 3/4 cup sugar. Arrange on the bottom of a well-buttered cake pan. Cake batter: 1/2 cup butter or other shortening, 1 cup sugar, 1/4 teaspoon salt, 2 beaten eggs, 1 3/4 cup cake flour, 3 teaspoons baking powder and 1/2 cup milk. Cream sugar and shortening, add eggs and beat. Add dry ingredients alternately with milk. Pour over rhubarb. Bake at 350 degrees for 1 hour. Cool 5 minutes, then loosen from pan with knife and remove. A.V.Gerten was the writer's name on this recipe card. |

| Rhubarb Pie 4 cups rhubarb cut fine 2 egg yolks - unbeaten 1 cup sugar 4 T. Flour 1 T. butter Mix all ingredients except butter. Pour into unbaked pie shell. Dot with butter- Bake at 425 degrees for 10 minutes. Reduce to 350 degrees and bake until rhubarb is tender. Meringue 2 egg whites - beat stiff 4 Tablespoons sugar 1/4 t. cream of tarter Rhubarb Cream Pie 1 1/2 cup sugar 3 T. Flour 1/2 t. nutmeg 1 T. Butter Blend, then Add 2 eggs. Pour over rhubarb and bake in unbaked shell. |

| Rhubarb Upside Down Cake 3 cups rhubarb, cut up. Put in bottom of 9"x13" cake pan. Sprinkle 1 cup sugar over rhubarb. Cover with miniature marshmallows. Now, 1 white cake mix. Mix according to directions. Pour this over rhubarb and bake in oven a little longer than cake recipe calls for. Serve with whipped cream or Lucky Whip. Rhubarb Dessert (belongs to Dorothy T.) 1 1/2 cup water 2 cups sugar - boil to spin thread Crop in 6 cups rhubarb and cook until tender, Add 2 packages of raspberry jello. Whip 2 packages of dream whip. Fold in - pour over graham cracker crust, which is made with 16 or so graham crackers and 1/2 cup melted butter. |

| Rhubarb Dessert Recipe added 1-20-2008 from a old tin recipe box. If anyone ever uses this recipe, please let me know how it turns out. I can't get over the dry jello. If my rhubarb patch is a go this year, I will give it a try and let you know how it turns out. Crust: 1 cup flour }Mix as for pie crust. 1 tsp. baking powder, 1/4 tsp salt, 2 tbsp. butter } Add 1 beaten egg and 2 tbsp. milk Mix and pat into 9x9 greased pan. Filling: 3 cups rhubarb and 1 package dry red jello Place rhubarb in crust and sprinkle 1 package red jello over rhubarb. Over the dry red jello, sprinkle streusel topping. Streusel Topping is 1 cup sugar, 1/2 cup flour, 1/3 cup butter, mixed together. Bake at 350 degrees for 45 minutes. This makes about 9 servings. |
