| Rhubarb pie and cake recipes. I never knew there were so many rhubarb pie, cake and jelly recipes. I do remember my mother had a patch of rhubarb growing on the farm. She planted her rhubarb right beside the strawberry patch. You would have thought the rhubarb was more precious then her roses. I never understood why. Now I do. Rhubarb is a treat to use. I love it. All of the collected recipes I add here are taken from handwritten recipe boxes or journals. I am, single-handedly, trying to salvage old recipes from being lost to us forever. You gotta love a collector. (You believe all that?) Seriously, Our mother's and grandmother's spent a great part of their lives in the kitchen preparing food for the family. Those days and times are lost to us forever. I don't want to loose their recipes too. It is their history, a part of who we were then. A part of why we are what we are today. Their recipes are our history. | Rhubarb Dessert
Recipe added 1-20-2008 from a old tin recipe box. If anyone ever uses this recipe, please let me know how it turns out. I can't get over the dry jello. If my rhubarb patch is a go this year, I will give it a try and let you know how it turns out. Crust: 1 cup flour }Mix as for pie crust. 1 tsp. baking powder, 1/4 tsp salt, 2 tbsp. butter } Add 1 beaten egg and 2 tbsp. milk Mix and pat into 9x9 greased pan. Filling: 3 cups rhubarb and 1 package dry red jello Place rhubarb in crust and sprinkle 1 package red jello over rhubarb. Over the dry red jello, sprinkle streusel topping. Streusel Topping is 1 cup sugar, 1/2 cup flour, 1/3 cup butter, mixed together. Bake at 350 degrees for 45 minutes. This makes about 9 servings. |

| Rhubarb Upside Down Cake
3 cups rhubarb, cut up. Put in bottom of 9"x13" cake pan. Sprinkle 1 cup sugar over rhubarb. Cover with miniature marshmallows. Now, 1 white cake mix. Mix according to directions. Pour this over rhubarb and bake in oven a little longer than cake recipe calls for. Serve with whipped cream or Lucky Whip. Rhubarb Dessert (belongs to Dorothy T.) 1 1/2 cup water 2 cups sugar - boil to spin thread Crop in 6 cups rhubarb and cook until tender, Add 2 packages of raspberry jello. Whip 2 packages of dream whip. Fold in - pour over graham cracker crust, which is made with 16 or so graham crackers and 1/2 cup melted butter. |

| Rhubarb Pie
4 cups rhubarb cut fine 2 egg yolks - unbeaten 1 cup sugar 4 T. Flour 1 T. butter Mix all ingredients except butter. Pour into unbaked pie shell. Dot with butter- Bake at 425 degrees for 10 minutes. Reduce to 350 degrees and bake until rhubarb is tender. Meringue 2 egg whites - beat stiff 4 Tablespoons sugar 1/4 t. cream of tarter Rhubarb Cream Pie 1 1/2 cup sugar 3 T. Flour 1/2 t. nutmeg 1 T. Butter Blend, then Add 2 eggs. Pour over rhubarb and bake in unbaked shell. |

| Rhubarb Cake - Marge 's Recipe Box - This recipe box was from around the 1950's
1/2 Cup Oil - (she noted she used Crisco) 1 teaspoon soda in 1 cup buttermilk 1 1/2 cup brown sugar 1 teaspoon vanilla 2 cups flour Lastly fold into dough 1 1/2 cups cut up raw rhubarb. Bake in 8 by 13" pan 30 -40 minutes. Sprinkle 1/2 cups sugar and 1 teaspoon cinnamon on top of dough before you bake it. Rhubarb Upside Down Cake 3 cups fresh Rhubarb, 10 marshmallows, haled, 3/4 cup sugar. Arrange on the bottom of a well-buttered cake pan. Cake batter: 1/2 cup butter or other shortening, 1 cup sugar, 1/4 teaspoon salt, 2 beaten eggs, 1 3/4 cup cake flour, 3 teaspoons baking powder and 1/2 cup milk. Cream sugar and shortening, add eggs and beat. Add dry ingredients alternately with milk. Pour over rhubarb. Bake at 350 degrees for 1 hour. Cool 5 minutes, then loosen from pan with knife and remove. A.V.Gerten was the writer's name on this recipe card. |
