Meat Loaf Recipes
An old fashion, vintage, collection of meat loaf recipes found handwritten on recipe cards.  The cards were collected from vintage tin recipe boxes.

I started collecting these inexpensive retro recipes and are including them here for all to enjoy.  Meat loaves being one of my personal favorite dinners or suppers. 

With its crispy ketchup covered top and juicy inside, who can resist the meat loaf.  You can make tiny little loaves or one big dinner size loaf.  The mere thought is making my mouth water.

As a left over, nothing compares to the meatloaf.  It make the best cold sandwich, smothered with all your favorite condiments. Perfect for that lunchbox the next day.

Pop a meat loaf the oven, set the timers and you had dinner waiting on you by the time the kids came home from school.

Mini Meat Loaves

1 Can tomato soup - 10 or so ounces.
2 lbs Hamburger
1/4 Cup fin dry bread crumbs
1 Egg - slightly beaten
1/4 Cup finely chopped onion
1 t. Salt
1/4 t Each pepper, sage, crushed thyme leaves
2 T. Shortening
2 - 4 T. Water

Mix thoroughly 1/4 cup soup, beef, bread crumbs, egg, onion, salt, and 1/8 t. each pepper, sage, and thyme. 
Shape firmly into 6 mini meat loaves. 
In skillet brown loaves in shortening, pour off fat.  Stir in remaining soup and seasonings, plus water. 
Cover, cook over low heat 20 minutes or until done.
Stir occasionally.  Serve with parsley potatoes and broccoli if desired. Makes 6 servings.
Meat Loaf Cacciatore

Measure into large bowl: 1 1/2 lbs. ground beef
1 egg, beaten, 1 cup milk, 1 1/2 teaspoons salt, 1 cup coarse soft bread crumbs, 1/8 teaspoon pepper, 2 tablespoons finely chopped onion, 1/3 cup finely chopped celery, 2 tablespoons prepared mustard. Mix well, using a two pronged fork - pack into lightly oiled glass loaf pan to shape it, then turn out into a greased shallow baking pan.
Indian Meat Loaf
Taken from a recipe box where most recipes were dated 1958 or 59.
This recipe did not have a name on it, like most of the others did.

1 pound of ground beef
1/2 pound ground pork
1 egg
1/2 cup corn meal
2 teaspoons salt
1/2 teaspoon of sage
1 1/4 cups canned tomatoes
1/2  cup onion
1/4 cup chopped green peppers
1/2 cup of cream styled corn
1/4 teaspoon of pepper

Combine all ingredients, mixing we.. Pack into 5 x 9-inch loaf pan.  Bake in a moderate oven, 350 degrees, for 1 1/2 hours.  Makes 6 to 8 servings.

Self Basting Meatloaf

3/4 cup catsup
1/4 cup dark brown sugar, firmly packed
3/4 teaspoon dry mustard
1/4 teaspoon allspice
1 1/2 pounds ground chuck beef
1 cup fresh bread crumbs
1 large egg
1/3 cup lemon juice
1 small onion, finely chopped
1 1/2 teaspoons salt
1/4 teaspoon pepper

In a small bowl whisk together catsup, brown sugar, mustard and all-spice.  Set aside.  In a large bowl mix together beef, bread crumbs, egg, lemon juice, onion, salt and pepper.  Pack into a wet 7 1/2 x 3 1/2 x 2 1/4 inch loaf pan.  Turn out on a foil lined 7 x 11 inch baking pan.  Spread half the reserved ketchup mixture over the top.  Bake in preheated 400 degree oven for 35 minutes.  Spread remaining ketchup mixture over top.  Bake 5 minutes longer.  Let stand 10 minutes before serving with rice.
Meat Loaf

1 pound ground beef
1 1/4 cups soft bread crumbs
1/4 cup chopped green pepper
1 medium sized onion, finely chopped
1 egg
1/4 cup milk
1/4 cup catsup
1/2 teaspoon salt
2 teaspoons prepared horseradish
1 teaspoon prepared mustard
Combine ingredients with your hands.  Pack in a 9 by 5 by 3 inch greased loaf pan.  Bake at 375 degrees for 35 minutes.  Serve as a cold meat, or hot with gravy.  Makes 4 servings.


Betty's Meat Loaf Jan. 29, 1974 Chillicothe Ohio
1 1/2 ground beef
2 eggs
4 slices rye bread
Give a good sprinkle of salt, thyme and pepper.
1 package onion soup - dry
1/2 onion -medium size

1/2 cup Buttermilk
1/2 cup milk
1/2 cup tomato juice
(she has "Scant" written after all three of these ingredients)

Knead and pat together - Spread out in pan. 
Brooks Catsup on top.
Bake at 350 degrees about 1 1/2 hours until done.
Done when pulls away from sides of pan
