|Date Pinwheel Cookies
Filling - Combine 1 cup water, 1 cup of sugar, 1 tbsp. of butter, 2 cups of
dates - chipped and 1/4 cup of chopped nuts. cook until thick. Allow this
filling to cool and then fill!
Dough: Sift together 5 cups of sifted flour, 1 tsp. salt, 1/2 tsp cinnamon and
1/2 tsp soda. Combine 3 eggs and 1 tsp vanilla. Cream together: 1 cup of
shortening and 2 cups brown sugar. Stir in egg and vanilla mixture. Add
mixture of dry ingredients and blend well.
Divide dough into 4 parts. Chill 2 or 3 hours. Then roll out 1 part of it on well
floured board to 1/4" thickness. Spread 1/4 of filling evenly on dough. Then
roll up. Proceed with remaining dough. Place rolls in refrigerator over night.
Next day slice into 1/2" thickness. Bake at 370 degrees for about 15 minutes.
Sprinkle with powdered sugar, if you like.
