Free Vintage Collection of Handwritten Pinwheel Cookie Recipes taken from tin recipe boxes, journals and any handwritten source I can find.
Mom's Cookie Recipes
Date Pinwheels
Filling:
1 pound pitted dates - cut up
1/2 cup water
1/2 cup sugar
1 cup chopped nuts
Cook everything, but nuts over medium heat for 2 or 3 minutes.  Cool and stir in nuts. 
Chill
Make cookie dough now.

Dough
2 cups sifted flour
1/2 teaspoons soda
1/2 teaspoons salt
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 teaspoons vanilla
Roll half at a time between wax paper.  Spread date mixture evenly over dough.  Roll up like jelly roll.  Chill rolls until firm.  Cut in 1/4 slices and bake 8 to 10 minutes at 400 degrees.

Vintage Recipe Books.
Pinwheel cookie recipe
Date Pinwheel Cookies

Filling - Combine 1 cup water, 1 cup of sugar, 1 tbsp. of butter, 2 cups of dates - chipped and 1/4 cup of chopped nuts.  cook until thick.  Allow this filling to cool and then fill!

Dough: Sift together 5 cups of sifted flour, 1 tsp. salt, 1/2 tsp cinnamon and 1/2 tsp soda. Combine 3 eggs and 1 tsp vanilla.  Cream together: 1 cup of shortening and 2 cups brown sugar.  Stir in egg and vanilla mixture.  Add mixture of dry ingredients and blend well.

Divide dough into 4 parts. Chill 2 or 3 hours.  Then roll out 1 part of it on well floured board to 1/4" thickness.  Spread 1/4 of filling evenly on dough.  Then roll up.  Proceed with remaining dough.  Place rolls in refrigerator over night.  Next day slice into 1/2" thickness.  Bake at 370 degrees for about 15 minutes. 

Sprinkle with powdered sugar, if you like.
